From a panoramic vineyard (at 668 m a.s.l.) protected by age-old chestnut trees, comes this wine named after the small church, the “pievina”, at Spedale farmstead. It’s a white wine that ferments in wood, conceived for ageing, elegantly combining the fruity notes, minerality and character of the grape varieties that it’s made from. The 2023 season yielded a scarce amount of grapes, but they had high concentrations of sugar and aromas; the Sauvignon grapes, for example, instead of the typical “green” notes, expressed their tropical character to the full. Harvesting took place at different times according to the ripeness of the grapes. After an initial phase of fermentation in steel, the must was transferred into 10 hl oak casks, where it also underwent malolactic fermentation. After 12 months of ageing the base wines were combined, this was followed by another 3 months to favour the blend, with monthly bâtonnage in order to extract sweetness and complex aromas from the yeasts.
Tasting – Colour: strong, brilliant straw yellow, which becomes more intense as time passes. The nose: a varied array of captivating aromas, tropical fruits such as mango and pineapple, then ripe apricot and jasmine blossom, elegant notes of vanilla and delicate hints of yeast. In the mouth: soft and well-balanced, but with decisive sapidity. Full, yet dry, a combination of structure and freshness promises further evolutions. The finish is lengthy, with fruity recollections of ripe apricot and buttery notes of brioche, echoing the olfactory profile.
Wine and Food Pairing – It comes from among the woods and goes well with flavours “from the land” such as fried mushrooms, Cipollina and pecorino stuffed ravioli with porcini mushrooms, rabbit “in porchetta”, as well as with fish dishes such as spaghetti with carpet-shell clams or salt-baked fish. Thanks to its aromatic qualities, it’s also excellent with chicken curry or chicken with lemon and ginger.
