Ingredients for 6 people:300 g watermelon flesh1 bottle dry sparkling wine2 limes, the juice (plus 6 slices to decorate the glasses)2 tbsp sugar
After removing the skin and seeds, cut the watermelon flesh into large pieces and put them in a bowl with the sugar and lime juice. Stir well, transfer into your food processor and blend; pour the mixture into a jug and put it in the fridge for about 2 hours. Then, when the time has passed, slowly pour in the sparkling wine. Stir and then divide the cocktail between the glasses, which you have previously prepared, each with 3 or 4 ice cubes in it and a slice of lime slotted onto the rim... now all that’s left to do is chink the glasses together for a cheerful toast to summer!
