Dried out to perfection, they are then seasoned, put into jars and covered with extra virgin olive oil. They enrich aperitifs and appetizers, raw and boiled vegetables, roast and boiled meat, and vegetable, rice or pasta salads. Coarsely chopped together with their oil, they can be used on bruschetta, pasta, pizza and focaccia.
