Among Fattoria La Vialla’s sweet specialities, honey certainly occupies a place of honour. A natural sweetener, produced by bees in order to survive the winter, it is rich in medicinal substances, from vitamins to antioxidants. In the protected territory of Fattoria La Vialla, the bees are free to “graze” on over 1,500 hectares of woodlands and fields, in which no pesticides or fungicides are used and everything is cultivated according to organic and biodynamic methods. La Vialla produces raw chestnut honey and raw wildflower honey. Following seasonal fruit harvests, traditional sweet Tuscan delicacies are produced in the Fattoria’s workshops and bakery: rustic strawberry, fig and blackberry jams, orange marmalade, biscuits made with stoneground flour (Cantucci, Viallini, Stracci and “Brutti ma Buoni”) and our chocolate spread (Viallella). Many of La Vialla’s sweet delicacies are sweetened with grape must.
