The magnificent town of Cortona is famous for its history and architecture, and also because its land produces the grapes for one of the best Syrahs, full-bodied, silky, delicately spiced. In addition, 2019 was a great year, with plenty of water, sun at the right time and also that extra “touch” that led to plump, juicy grapes, with a high content of polyphenols and anthocyanins. Some of the wine from the Viallino vineyards at Cortona ages in Slavonian oak casks containing about 36 hectolitres, the rest in tonneaux barrels that have already been used once and contain 500 litres. After 24 months, they are blended and the cuvée remains for another year in the bottle, where the bouquet becomes even more harmonious and rounded.
Tasting – Colour: intense ruby red, almost impenetrable. The nose: small forest fruits, in particular blackberries, hints of balsamic notes, humus, cinchona; delicately spicy touches of wood and pepper. In the mouth: fresh, dry and opulent, dense on the palate, with strong tannins but good silkiness and long persistence.
Wine and Food Pairing – Perfect with every kind of grilled meat, accompanied by caramelised onions, for example, or olive pâté. It’s excellent with stewed wild boar, “Peposo” (a peppery stew) or braised ox cheek, and it makes a prestigious companion for tagliatelle with wild boar sauce, or pici with Salsa Etrusca.
NB: we recommend that you open the bottle at least an hour in advance, to let the wine breathe, so that its bouquet can open up completely.
