Cuvée rosé is produced in the Oltrepò Pavese area using Pinot Nero grapes, which in the 2020 season endured hot weather, occasional hail and a few violent thunderstorms. The selection carried out was rigorous: only the undamaged, healthy bunches were picked (by hand), taken straight to the cellar and pressed, so that the skins tinged the must a shade of powder pink. In spring, the wine was bottled with the yeasts and sugar required for its second fermentation; it remained in the bottle for 24 months on its lees.
Tasting – Colour: brilliant powder pink, which tends towards orange as the wine ages in the bottle. The nose: delicate aromas of wild strawberry, raspberry and dog rose, saline notes well-balanced by hints of yeast, toasted bread and brioche. In the mouth: fresh, dry and creamy, with fine, persistent bubbles, excellent minerality and acidity.
Wine and Food Pairing – Ideal for a toast on festive occasions, but also enjoyable in a glass during a meal: for an aperitif with cheese (and Peperonata Dolce!) and cold cuts, with appetizers (for example “vitello tonnato”, pizza with stracchino and anchovies…), with beetroot risotto, with main courses, even elaborate ones, of fish and seafood.
