The Prince of Tuscan dessert wines, liquid “of saints”, which, throughout the ages, has traditionally been safeguarded in small oak and cherry wood barrels by both gentlemen and farmers of this land, ubiquitous gift of hospitality, the most famous of all dessert wines, Vin Santo. It’s a very fine amber-coloured liquid, with an ancient, elegant look to it. Made with selected grapes, which are dried out for 3 months, then re-selected and pressed. The grape must rests in small Caratelli barrels, made of oak or cherry, for 4, 5 or 6 years, according to the type and whether it’s a “riserva”. Fattoria La Vialla produces two D.O.C. Chianti “Riserva” types, going well beyond the production specifications – that are already strict – established in the procedural guidelines. The “classic” white version, from Malvasia and Trebbiano grapes (4 years in Caratelli, 5 years for the Riserva), and the “Occhio di Pernice”, from red Sangiovese and white Malvasia grapes (5 years in Caratelli, 6 for the Riserva). Our range of sweet dessert wines also includes the Passito I.G.T. and the sparkling Zanzarato.
