Blended freshly picked tomatoes, a few leaves of basil, a pinch of salt, a drop of lemon and… voilà: the “Spremuta" is ready! Dense enough to be transformed into a tomato sauce (heated for 3 minutes with oil, garlic and herbs, for example) or used as an ingredient of other sauces for pasta, for crostini, bruschetta, pizza, beef “alla Pizzaiola”, chicken, rabbit, stewed game… the list is never-ending. It can also make an excellent aperitif with pepper, chilli pepper, balsamic vinegar, a pinch of salt, or whatever else you prefer.
