Ingredients for 4 people:600 g boiled beef800 g onions1 jar La Cipollina (280 g)500 g peeled tomatoes2 cloves of garlic5-6 tbsp Extra Virgin Olive Oil salt and pepper
Clean the garlic and onions, slice them all thinly and then sauté them with the olive oil in a deep saucepan. When they are golden brown add the boiled meat, chopped into small pieces, stir and cook for 5 minutes. Add the peeled tomatoes, squashing them with a wooden spoon, then add the Cipollina, season with salt and pepper and mix everything together with the meat. Cook over a low heat for roughly 30 minutes, until the tomatoes are reduced and the consistency thickens. When the cooking time is over, put the meat and its sauce on a serving dish and serve it nice and hot.
This is a recipe of days gone by, from the so-called “poor cuisine", which was also full of tasty ideas on how to use leftovers (in this case boiled beef).
