Ingredients for 4 people:4 fairly thickly cut slices of beef weighing approx. 100 g each50 g grated pecorino or Parmigiano3 tbsp breadcrumbs (2)2-3 tbsp Extra Virgin Olive Oil2 tbsp chopped parsley2 cloves of garlic1 knob of butter
Mix together the breadcrumbs, grated cheese and very finely chopped parsley and cloves of garlic (from which you have removed the shoot inside). Grease the surface of the slices of beef with the butter, previously left at room temperature to soften, so that the breadcrumb mixture sticks to them well. Coat the slices of meat with the breadcrumb mixture, then grease the bottom of a baking dish with 2 or 3 tablespoons of olive oil and place them in it. Cook in a preheated oven, at 180 °C, for about 7-8 minutes: when the surface of the meat turns golden, take it out of the oven and serve it hot, accompanied by a fresh, seasonal salad.
(1) This is a quick dish to prepare, it’s simple but very tasty and quite common in Sicily, especially in the city of Palermo, from which the recipe gets its name.
(2) The ideal breadcrumbs for this recipe are prepared by coarsely chopping up one or two slices of stale homemade bread.
