This is a light, very slightly effervescent white with just a tinge of pink. Slightly sweet thanks to its few grams of natural residual sugars, it’s perfect when the temperature rises. It comes from an ideal year for wines with a low alcohol content; thanks to the rain, the grapes were ripe but not overly so, their sugar content was well-balanced, and they were full of juice. The must was cooled to a low temperature in order to completely separate the solid particles and pieces of grape flesh before fermentation, which was then stopped just before its conclusion to preserve the wine’s distinctive traits – a hint of sweetness and very fine bubbles.
Tasting – Colour: intense straw-yellow with slight pale pink highlights. The nose: sweet fruity aromas, with white-fleshed fruit, apple and pear, as well as nuts. In the mouth: faintly effervescent, indicating its youth and lightness, very slightly sweet and soft in the finish.
Wine and Food Pairing – It has the agile grace of an aperitif but can “extend” its company throughout a meal, for example with delicate fish dishes – a seafood appetizer, gnocchi with prawns and cherry tomatoes – or pasta with zucchini and pecorino, with frittatas, grilled vegetables, crostini with Carciofina or with Tuscan kale and sun-dried tomatoes.
