This noble white, aged in wood (to accentuate the complexity of its ample – fruity, vegetal, mineral –bouquet), comes from the Fattoria’s “highest” vineyard, at 668 metres a.s.l. In the hot 2022 season, it was precisely the altitude of the vineyard with the relative diurnal temperature ranges that preserved the vegetal notes of the Sauvignon Blanc, while the Viognier and Gewürztraminer were less intense, and the contribution of the Chardonnay was rounded, as always. The grapes were picked at different times according on their ripening period, and the timing for pressing and fermentation of the musts, which went into casks containing 10 hl, also varied. After 12 months – and malolactic fermentation – the time to blend them arrived, followed by another 3 months in casks, with monthly bâtonnage to extract all the aromas and sweetness of flavour possible from the yeasts.
Tasting – Colour: strong straw-yellow that tends to become more intense during ageing in the bottle (something to which this wine is particularly suited). The nose: notes of elderflower and the typical tomato leaf, followed by vanilla and a touch of wood, as well as a hint of tropical fruit. In the mouth: initially austere, it opens up on the palate revealing all of its numerous aromatic notes rounded by skilfully dosed wood.
Wine and Food Pairing – It’s born on-high, in the woods, and maybe that’s why it goes well with fragrant dishes “from the land” such as pappardelle with porcini mushrooms, fried mushrooms, rabbit “in porchetta”, as well as fish dishes such as spaghetti with carpet-shell clams, ravioli stuffed with seabass, salt-baked fish and, thanks to its aromatic qualities, chicken prepared with lemon and ginger or with curry....
