Thirty-five years after the first harvest, this classic white – from one of the Fattoria’s oldest Farmsteads – has been enhanced by a small amount of Chardonnay. To do this, the wine’s denomination has changed from “Colli dell’Etruria Centrale” to “Toscana I.G.T.”, which allows more flexibility in the blend. The bouquet has acquired new fruity and mineral notes, and the wine has gained more body along with a fine butteriness. The persistent spring rainfall in 2023 compromised the health of some bunches and made careful selection of the grapes necessary. The Trebbiano and Chardonnay reached the winery 12 days apart, due to their different ripening periods. Rapid pressing and low-temperature fermentation – with malolactic fermentation halted – managed to preserve the wine’s freshness and acidity.
Tasting – Colour: golden yellow, brilliant and gleaming. The nose: typical sensations of Trebbiano, nuts and Golden Delicious apple with a touch of hay, while the Chardonnay has given the wine new aromas of yellow flowers and fruit. In the mouth: intense and full, with a good alcohol content balanced by structure and acidity.
Wine and Food Pairing – This is a simple wine, typical of our area but extremely versatile, which goes nicely with appetizers such as fried vegetables, crostini with Asparagina, artichokes preserved in olive oil. It’s excellent with frittata, delicate cold cuts, fresh cheeses or pasta dishes such as penne with artichokes and pecorino, fusilli with creamed peas and pancetta. It also goes well with seafood dishes.
