A single grape wine, made with 100% Vermentino grapes from Viallino vines that grow in the Tuscan Maremma, not that far from the sea, with fruity aromas and marked minerality that stand out pleasantly in the glass. In a year that was even more particular than the previous ones, rain that lasted until June gave the vines luxuriant foliage, which acted as an umbrella to protect them from the scorching sun during an extremely hot month of July and beyond. The bunches, which were small, with slightly dry but nicely ripe grapes that had good acidity, were pressed right beside the vineyard immediately after harvesting, and the must was quickly transferred to the winery to preserve the aromas. After fermentation, regular bâtonnage of the yeasts make it possible to protect the wine from oxidation without adding sulphites, while they enrich it with “sweet” polysaccharides and complex aromas.
Tasting – Colour: strong straw yellow, which tends to become more intense as time passes. The nose: wildflowers and hints of hay, with echoes of sea breeze. In the mouth: dry with mineral notes and a touch of flint.
Wine and Food Pairing – Spaghetti with musky octopus, seafood risotto, oven-baked and salt-baked fish, octopus with potatoes, or grilled squid; also more robust, typical dishes, such as salt cod “alla Maremmana”, spinach and ricotta tortelli dressed with butter and sage, fresh cheese and honey bruschetta, or cooked vegetable dishes.
