This Pinot Grigio from the Fattoria is unusual due to the fact that it comes from Tuscany – the particular grape variety is typical of the north – and to its “cloudy” character (it’s unfiltered in order to preserve the wealth of aromas). In the area where its grapes grow, on a hillside that emerged from a prehistorical seabed, the heat and drought of 2023 left their mark. The grapes were picked at dawn and pressed immediately, at the edge of the vineyard. Very careful removal of the grape solids avoided the presence of excessively heavy and coloured particles during fermentation. When all the sugars had been transformed into alcohol, the wine was racked and then underwent bâtonnage, which keeps the yeasts in suspension. The fine lees preserve the integrity of the wine’s flavour and are an effective natural antioxidant.
Tasting – Colour: opalescent, with coppery hues that intensify as time passes in the bottle. The nose: white-fleshed fruit, pear and Golden Delicious apple, hints of summer wildflowers. In the mouth: velvety, it surprises you with an almost sweet impression (but it’s the yeasts, not sugar!); long, full and delicate aftertaste.
Wine and Food Pairing – It loves fish and shellfish (raw, steamed or grilled). It also happily accompanies light appetizers, such as bruschetta with vegetables or with anchovies and capers, or a courgette flan. And it’s excellent with spaghetti with oven-baked tomatoes, with fish first courses, white meat and young cheeses.
