The Fattoria’s first semi-sparkling wine, which immediately became a classic at aperitif time thanks to its freshness and delicate perlage. The Pinot Nero grapes come from the Viallino vineyards in the Oltrepò Pavese area, the land of sparkling wines, where the very hot summer reduced the harvest. The Trebbiano Toscano and Chardonnay – which contribute to the roundness of the Mussantino’s bouquet and body – are picked at the Fattoria; here the rainfall in September gave us juicy grapes, with excellent freshness. After fermenting separately the base wines were combined in a blend, which remained on its fine lees until time for refermentation; this was triggered when fresh must, rich in the natural sugar from the grapes, was added to the wine. Compared to a “spumante”, the effervescence of Mussantino is more delicate, “lighter” (2 bars of pressure compared to 4.5 or 5).
Tasting – Colour: crystal-clear straw yellow with more intense hues as time passes. The nose: wildflowers and white-fleshed fruit, green apple, pear. In the mouth: lively, pleasantly effervescent with fresh and balsamic notes.
Wine and Food Pairing – Extremely enjoyable at aperitif time in the company of all kinds of “nibbles”, but it’s also perfectly at home at the table with aubergine and swordfish roulades, little salt cod balls, risottos and fish first courses. It’s also excellent for making cocktails, with orange juice for a fragrant “Mimosa”, or with peach purée for a delicious “Bellini”.
