Slightly different but true to itself, this year it’s “dressed” in pink. The colour accentuates, but doesn’t revolutionise, the nature of this fresh, fruity wine, produced using the Metodo Ancestrale (= Ancestral Method) which preserves the delicate primary aromas to the full. Its grapes – 100% Pinot Nero – are grown in the Oltrepò Pavese area, where the 2023 season saw major changes in the weather, with a particularly rainy month of June that gave way to a torrid summer which was, however, mitigated in that area by marked diurnal temperature ranges. The grapes were picked very ripe, with a sugar content that was ideal for the Metodo Ancestrale, ensuring the "presa di spuma" (= formation of bubbles) without the addition of extraneous sugars. The “change of clothing” occurred during pressing; a few extra moments of contact with the grape skins were sufficient to tinge it with pink.
Tasting – Colour: powder pink with deeper nuances that, as time passes, turn towards onion skin. The nose: in perfect harmony with the colour, forest fruits, raspberry, wild strawberry, currants and a hint of dog rose stand out. In the mouth: effervescent, however more delicate than a “spumante”, pleasantly aromatic on the palate as well.
Wine and Food Pairing – Perfect for aperitifs, it knows how to go beyond and accompanies appetizers (stuffed eggs, savoury pancakes, cold cuts, crostini), meat or fish carpaccio, prawn cocktail, rice or pasta dishes with delicate sauces, as well as “gnudi” with butter and sage.
