The Pinot Nero grapes for this sparkling wine grow in the Oltrepò Pavese area, where, as in the rest of Italy, the summer was extremely hot, interrupted by a few heavy thunderstorms with some light hail. The abundant foliage – left to grow freely in this scorching season – protected the grapes from the sun and hail. The bunches, helped by a little irrigation, produced grapes that were small but rich in sugar, giving sweet must and wine with a high alcohol content. Ca’ dell’Oro is produced with the “Metodo Ancestrale” (= Ancestral Method): 30 days before bottling, slow fermentation is induced at 16 °C, to maintain the aromas and freshness. When a residual sugar level of roughly 24 g/l is reached, the tank’s valves are closed for the "presa di spuma" (= formation of bubbles), which occurs without adding any sugar, thanks solely to that found in the grapes.
Tasting – Colour: intense pink with tinges of violet. The nose: if we hold a glass of the wine near, we can smell – one after the other – all kinds of small red fruits, from wild strawberries to raspberries, from cherries to redcurrants, to dog rose and its hips. In the mouth: it tastes fruity, with a pleasant sensation of freshness given by the perlage and the good acidity.
Wine and Food Pairing – Unbeatable with appetizers (crostini with fish, vegetables – beans and extra virgin olive oil! – or Salsa Nera, fresh or semi-mature cheeses, non-spicy cold cuts, omelette) or with fish-based pasta dishes, creamy vegetable risotto, fatty fish and white meat. So, a bottle can accompany an entire menu... even with dishes that have an aroma of curry, turmeric or sweet paprika.
