La Vialla’s first rosé has a distinct personality; it has plenty of body but remains light, it abounds in freshness, with intense aromas of red fruits and excellent minerality. It’s not just any rosé, it’s rosaRosa! The weather, which was very wet at first and then hot and dry, partly compromised the production of grapes, but the ripe bunches were packed with polyphenols and anthocyanins. This meant that the colour extracted through contact with the skins during pressing was sufficient, and maceration on the skins wasn’t necessary. Rapid fermentation, racking on the fine lees and a period in steel, made it possible to preserve the typical freshness of this wine.
Tasting – Colour: intense dusky pink, tending towards orangey-pink as time passes. The nose: floral and fruity at the same time, with a succession of multifaceted aromas; dog rose, raspberry, redcurrant, grapefruit. In the mouth: light, never banal, it’s pleasantly soft but also fresh and dry on the palate, with good salinity.
Wine and Food Pairing – A versatile wine that loves to mix with different company. Ideal for an aperitif or with tomato and/or aubergine-based pasta recipes (penne with Parmigianina for example), salmon cooked with lemon, octopus with potatoes and artichokes, strips of chicken with “Giardiniera”, as well as with grilled meat, fish and vegetables (even spicy!), cold cuts and cheeses. It’s also good for making sophisticated pink cocktails, for example with grapefruit juice and a few mint leaves.
