A full-bodied red with a generous bouquet – the secret of this Viallino super Tuscan is contained in its name, "Barriccato". It's aged in oak barrique barrels that the Fattoria's oenologist, Marco Cervellera, chooses personally, one by one. The grapes – very Tuscan Sangiovese and a small but essential quantity of Cabernet Sauvignon – endured a very dry season in 2021, with temperature of over 35 °C. When picked, they were healthy, rich in sugar – therefore with significant alcohol potential – and with a high concentration of polyphenols, which resulted in dense, intensely coloured wines. The base wines underwent malolactic fermentation and were then transferred into barriques; 75% of the Cabernet and 20% of the Sangiovese went into new ones, while the rest went into barriques already used once. After 22-24 months the base wines were "assembled”, and after bottling, the Barriccato remained another 6 months in the cellar to enhance the blend.
Tasting – Colour: deep, dark purple red, it will tend towards garnet as time goes by. In the glass it forms dense legs, indicating good body. The nose: spices and blond tobacco, with notes of vanilla and toasty wood, and hints of ripe blackcurrant. In the mouth: soft tannins and full-bodied on the palate; it's harmonious, persistent and leaves a clean mouthfeel.
Wine and Food Pairing – It is ideal to accompany Pappardelle with wild boar or game sauce, meatballs (even vegetarian ones!) in tomato sauce, beans “all’uccelletto”, complex meat dishes such as pan-cooked pork with rosemary and pepper, succulent roast game, or mature cheeses.
