There is no red grape more Tuscan than Sangiovese, which in this region is rustic but virtuous, like the local farmers. In some areas, however, it reveals its noble side more easily. For example, the Viallino vines in the Capannelle vineyards are particularly suitable for wines to be aged at length (the soil in which they are cultivated isn’t far from the hills where Brunello grows!). The 2020 season, with frost in March and April and an arid summer, saw a considerable reduction in yield, but the “surviving” bunches were of a very high quality, perfect for powerful, concentrated wines. Fermentation took place at a lower temperature than usual (23 °C), with frequent pumping over to preserve the grapes’ freshness. The wine aged for 24 months in Slavonian oak casks and in tonneaux that had already been used once, followed by another year in the bottle.
Tasting – Colour: dark purple with a garnet rim that becomes more intense as time goes by. The nose: a wide range of aromas; from red fruit to black pepper, from dried rose petals to balsamic notes and blond tobacco. In the mouth: full, with important body and alcohol content; intense but soft tannins with a lengthy and fragrant finish.
Wine and Food Pairing – A glass of this powerful, velvety wine doesn’t require anything else! However, it makes a perfect combination with a Fiorentina T-bone steak, pork loin with prunes and mushrooms, porcini mushroom or sausage risotto, or simply with a mature cheese such as Pecorino Gran Riserva.... so it can fully reveal its noble but rustic soul.
