The vineyards for La Vialla’s – and Tuscany’s! – most famous wine grow both in the valley and on the Fattoria’s hills. This, especially for the Sangiovese grapes (90% of our Chianti), makes it possible to offset the effects of hot, dry summers. The wine remains well-balanced because its grapes ripen at different times, are harvested and fermented separately, and have different periods of maceration. After 5 months of ageing in wood, the base wines are blended to create a well-balanced, dry red wine with pleasant and elegant tannins.
Tasting – Colour: ruby red, not overly intense, with hints of purple while young. The nose: typical aromas of violet and fine balsamic notes, a hint of liquorice and a spicy finish. In the mouth: austere but with delicate tannins; long, dry aftertaste.
Wine and Food Pairing – It goes with virtually any dish and in particular with Tuscan recipes: pici with meat ragu or “Sugo Finto”, red meats (grilled or roasted), meatballs in tomato sauce and beans. It’s excellent with thick bread soups (ribollita and “pappa al pomodoro”), medium aged and mature cheeses, meat or vegetable roulades, aged cured ham and cold cuts…
