Chianti is a wine legend of the Tuscany territory, of its traditions, of the flavours and aromas of its hills. At the same time, it expresses the character of the particular year and the cultivation method used by its “farmer”… in recent years, the extremely hot weather has produced loosely clustered bunches of grapes at the Fattoria, with a lower yield and a higher skin- to- juice ratio; this has, however, improved tannic intensity, colour and structure. The thin, ripe skins have given – without lengthy periods of maceration and at moderate temperatures (maximum 15 days at 25 °C) – wines full of body and colour.
Tasting – Colour: lively ruby red, with a slight garnet rim that gradually becomes more evident with ageing. The nose: typical aromas of Sangiovese grapes, in which notes of violet and red fruits are coupled with balsamic and sweet spicy tones. In the mouth: soft but with a certain freshness (from the Sangiovese) and an important tannic sensation, especially in the early years; it mellows, and its consistency and persistence increase as it ages in the bottle.
Wine and Food Pairing – It’s a wine that doesn’t have many limits: however, its favourite dishes are traditional ones, pici with meat ragu or Sugo Finto, red meats (grilled or roasted), thick bread soups, medium and mature cheeses, meat or vegetable roulades, aged cured ham and cold cuts…
