An elegant, spicy red with an irresistible bouquet bestowed on it by the area between the beautiful town of Cortona and Lake Trasimeno, with its schistose soil rich in clay and sand. 2020 marked the beginning of the now constant trend of scorching summer weather and drought. The harvest was brought forward to preserve the freshness of the grapes; thanks to the rainfall that preceded it, they were plump and juicy, full of anthocyanins and polyphenols. Extraction of the aromatic components and colour occurred rapidly. The 24-month period of ageing in wood was followed by 12 months in the bottle.
Tasting – Colour: impenetrable ruby red, tending towards garnet as the wine ages. The nose: vanilla, together with a rich bouquet of forest fruits – first and foremost blueberry – typical traces of black pepper and fine blond tobacco. In the mouth: exuberant and explosive in in richness, still young and tannic but inclined to soften as the years go by.
Wine and Food Pairing – The perfect companion for ancient Tuscan recipes, in particular those from the Cortona area: crostini with Salsa Nera or olive pâté, pici with Salsa Etrusca, Peposo (a tasty stew) or stewed wild boar. It’s also excellent with grilled meat and caramelised onions, or pasta filled with smoked aubergine, dressed with butter, sage and pecorino.
