Chianti, an area in the heart of Tuscany in which beautiful territories and landscapes abound, manages to give its wines a unique character; they are both robust and elegant at the same time... and this is clearly conveyed in a glass of Riserva. The hot weather in 2020 boosted ripening, resulting in colourful, polyphenol-rich grape musts. Fermentation – entirely without sulphites – and ageing took place in 25 hl Slavonian oak casks for the Sangiovese and Canaiolo, and in barriques for the Cabernet in order to favour softer, more docile tannins. After 12 months, the base wines were blended and then continued ageing together for another year.
Tasting – Colour: intense ruby red, the dense legs around the glass are emblematic of body and richness. The nose: it opens with marked aromas of dark and red fruits, especially blackberries, followed by balsamic and spicy notes, and a typical hint of violet, with a slightly toasty touch in the finish. In the mouth: austere and tannic, but at the same time full and robust in its complexity.
Wine and Food Pairing – Rustic yet noble at the same time, it can be drunk on its own, maybe in the company of a good book. However, it also goes well with the robust dishes of its territory, such as pappardelle with porcini mushrooms or wild boar sauce, “strozzapreti” pasta with chestnuts and mushrooms, lasagne with Sugo Finto... and it’s ideal with steak, jugged hare, cold cuts and mature cheeses.
