The first “Super Tuscan” born at the Fattoria: the quintessential Tuscan vine variety, Sangiovese, in partnership with international Cabernet Sauvignon and with…. wood! And over the years (this is its 35th vintage) it has maintained its character and soul. It’s the offspring of aromatic barrique barrels, of its land and naturally of the year; 2020, which was marked by a hot summer that lasted until the end of September, producing grapes with a high concentration of sugars and polyphenols. After fermentation, 75% of the Cabernet and 20% of the Sangiovese were “transferred” into new barriques, while the rest went into barriques already used once. After 20-22 months the blend was assembled and then, after another 6 months, it was bottled without filtering; in this way the wine continues to age with the fine yeast lees.
Tasting – Colour: deep, dark purple-red, tending towards garnet as time goes by. Dense in the glass, where it moves slowly and forms copious legs. The nose: warm aromas of vanilla and pastries, sweet spiciness with blackberry and redcurrant jam. In the mouth: generous, “fat ” and tannic, it completely captures the palate; the aftertaste is incredibly long.
Wine and Food Pairing – It is ideal to accompany Pappardelle with wild boar or game sauce, beans “all’uccelletto”, complex meat dishes such as pan-cooked pork with rosemary and pepper, succulent roast game, liver pâté and mature cheeses.
