Pride and joy of every “Chiantigiano” (= inhabitant of the chianti area), a Riserva wine requires special care and attention; vineyards and grapes are rigorously selected, only small quantities are bottled, monitoring is meticulous, and ageing is lengthy... for this Riserva in particular! The wine has spent almost ten years in wood and in the bottle, evolving from precious to “noble”. Its rich bouquet and elegant, aristocratic softness are the offspring of a vintage, 2014, which initially didn’t seem to be the best among recent years, but that, also thanks to the care and selection carried out by the Viallini, gave us a great red.
Tasting notes 2017 – Colour: deep, dark ruby red with garnet tinges. The nose: a rich and ample bouquet, from aromas of sweet red fruit to subtle spicy notes of wood, toastiness that is never obtrusive, and subtle vanilla. In the mouth: very soft, it envelops the palate with sweet and velvety sensations. The total lack of astringency and the long persistence leave the mouth rich in acidity.
Tasting notes December 2024 – Colour: deep red streaked with garnet, the chromatic appearance is still steadfast and intense. The nose: a generous bouquet that opens with balsamic and spicy notes, and concludes, after aeration in the glass, with dried fruit and ripe cherries. The finish is earthy. In the mouth: elegant beyond all expectations, good structure with solid, dense tannins that are not astringent but soft.
Wine and Food Pairing – A rarity, for which a glass and the time required to let the wine breathe (possibly in a decanter) can suffice. However, considering its Tuscan character, it enjoys the company of dishes such as beef braised in Chianti, oven-cooked stew with potatoes, or tagliatelle with porcini mushrooms. It’s also excellent with flavoursome, aged cheeses.
