A Tuscan – biodynamic – Pinot Nero, a red wine aged at length that conveys the elegant fullness of its grapes in the glass. The 2019 season was the best in the last ten years. Dry but not overly hot weather in September, gave the vines bunches of plump grapes and must full of aromas and colour, as well as favouring optimal development of the tannins. After a long period of maceration in contact with the skins, the liquid was transferred into used wooden barriques, which enriched the bouquet with not overly intrusive tertiary aromas. The rest was left to time: first 48 months of ageing in the barriques, then “assembling” – in concrete vats to favour the blend – and finally bottling, followed by another four months of ageing.
Tasting – Colour: an elegant shade of carmine red in the centre that slowly fades to pale garnet around the side. It glides in the glass with good density, limpid and appealing. The nose: a first impact of intense strawberry jam and cherries preserved in alcohol. It then reveals its alcoholic strength, between moss and forest floor, bay leaf, tobacco and notes of myrtle. And it concludes with delicately balsamic notes. In the mouth: an absolutely velvety mouthfeel and well-integrated tannins convey a soft evolution of taste, between well-dosed acidity and alcoholic strength. The aftertaste is of macerated fruit.
Wine and Food Pairing – A wine to sip slowly on its own, or to pair with flavours that are worthy of it; bruschetta with porcini mushrooms, pappardelle with meat or lentil ragu, stuffed fillet of beef, stewed veal with porcini mushrooms, a slice of oven-baked red cabbage with hazelnuts, thyme and fondue of “formaggio di fossa”, or mature cheeses such as pecorino Gran Riserva.
