The tradition of rosé Méthode Traditionnelle wine has just celebrated its 260th anniversary! The production of bottle-fermented sparkling wines is now also well established in Italy, especially in the north. And, in fact, it’s in the Oltrepò Pavese area that La Vialla grows its Pinot Nero, the absolute protagonist of this Cuvée and of its pink hue, obtained thanks to the brief contact between skins and juice during pressing. The cool, damp spring delayed the development of the grapevines, but thanks to the hot weather afterwards and, later on, to manual harvesting, careful selection of the bunches and pressing practically beside the vineyard, the freshness and aromas of the Pinot Nero were maintained. The wine remained on its lees in the bottle for 24 months.
Tasting – Colour: pale powder pink, with an orange rim when aged at length. The nose: delicate and wide-ranging aromas, red forest fruits, raspberry, hints of citrus fruits and wildflowers, with a subtle salinity reminiscent of a sea breeze. In the mouth: good effervescence given by the extremely fine bubbles; sapid and well-structured.
Wine and Food Pairing – Created to celebrate special occasions, it also goes nicely with a meal. It’s excellent with cheeses and cold cuts, with “vitello tonnato” (= veal with tuna sauce), beetroot risotto, penne with Peperotta, as well as with seafood main courses.
