The summer of 2014 was cool and rainy, and a harvest consisting of the best bunches of Pinot Nero gave grape must that was rich, fragrant and “whole”, for a truly unique wine. Fermentation was gentle and continuous; when it was over the base wine remained at length in wood, in order to obtain both malolactic fermentation and enhance its structure and variety of aromas. After about a year and a half the “presa di spuma” (= formation of bubbles) took place, followed by seven long years in which the wine rested in the bottle, on its lees, acquiring creaminess, structure and softness. The “liqueur d’expédition”, added after dégorgement, was minimal; this wine is a “pas dosé” and its potential is left entirely to the quality of the grapes, the must and the long process used to produce it.
Tasting – Colour: a lovely, almost golden, yellow that recalls sand at sunset. The nose: fruity, floral toasty aromas. A labyrinth of ripe apricot, hawthorn and hazelnut that opens up and encounters cassis, then bread crust and sweet gingerbread. In the mouth: the first impression is one of softness, conveyed by the creamy bubbles that bring acidity and sapidity along with the aroma of orange blossom, until reaching the balance that is the soul of this wine. Structure and persistence lead us to a finale of elegant musky notes.
Wine and Food Pairing – The best thing is simply to uncork it on a special occasion and enjoy it on its own! But a wine like this also deserves a table full of dishes “fit” for it… full of flavour. In fact it’s excellent with a panino with mortadella, crostini with Tuscan “salsa nera”, mature cheeses, but also with lobster “in Bellavista” or leek and truffle risotto…
