The 2013 vintage, with its opulent and complex bouquet, earned the Fattoria the title of “Sweet Wine Producer 2023” at the IWSC in London, and the 2015 vintage is following suit. The healthy, well-developed bunches with very ripe, sweet grapes were left to dry out for a while on the vines, before continuing to do so on racks until December. This magnificent wine differs from its sibling, the non-riserva Vin Santo Occhio di Pernice, in that the grapes and caratelli barrels are even more carefully chosen, and it ages in them for a period of more than 7 years.
Tasting – Colour: golden brass with amber nuances, slightly hazy in the bottom. The nose: juicy dates, dried figs, mushrooms, truffle and sweet tobacco, combined with a background of vanilla. In the mouth: enveloping thanks to its rich sugar content, harmonious and persistent, almost like a slowly melting chocolate.
Wine and Food Pairing – It’s a wine for pampering yourself and your friends; it doesn’t need any other company. Those who want to be daring can try it with mature pecorino – possibly also a “Riserva” – and a drop of honey, with rich desserts (such as crème brûlée), aromatic specialities (Panpepato from Siena), dark (even very bittersweet) chocolate, or an almond and raisin cake.
