La Vialla’s vineyards in Sicily are cultivated not far from Trapani. Here they enjoy the breeze blowing in from the sea (which is nearby as the crow flies), many hours of sunshine and cool ventilated nights. The winter and spring of 2022 were unusually rainy in Sicily, which was a boon for the vineyards in view of the heat that then followed from early June. The vines, which have deep roots due to their age, were able to take advantage of the reserve of accumulated water. The grapes were left to dry out on the vines and vigorous pressing helped squeeze out every last drop of the precious juice, which was then fermented slowly, as always. When an alcohol content of around 12% vol. was reached, fermentation was stopped in order to maintain the wine’s characteristic, natural sugars.
Tasting – Colour: intense golden yellow with amber and saffron highlights that, with lengthy ageing in the bottle, become almost copper coloured. The nose: aromas of jasmine, as well as passion fruit, dried figs and dates, candied citrus fruits. In the mouth: honey-like, with a tase of acacia blossom, pleasantly sweet and soft.
Wine and Food Pairing – A “meditation wine”, also good chilled, which equally finds its place with the cheese board – pecorino or blue cheeses, accompanied by preserves and jams – and when the dessert arrives, with pastries, Sicilian “cannoli”, ricotta and orange tart, pistachio ice cream. It also makes an agreeable combination with Panettone and chocolate deserts.
