“Whole”, more fragrant and flavoursome, richer in antioxidants and essential amino acids, 52% of which are contained in the tomato skins (and seeds). They can be used to prepare sauces, top pizza and bruschetta, fill “calzone” (= folded, stuffed pizza) or cook meat and vegetables – like peeled tomatoes but with the flavour and properties of fresh tomatoes.
