So called, in Neapolitan dialect for their shape (“tubettino” = small tube) they are much loved by the gourmands of Naples and the surrounding area, and with good reason. Perfect with any type of dressing, it’s as if they were “wrapped” inside and out, with the various sauces, each one becoming a delicious “mouthful”.
A cooking tip: stir the pasta delicately, and only after a few minutes of cooking, to avoid it breaking.
