Linguine are a type of long pasta similar to spaghetti, but unlike spaghetti - which are cylindrical - they are flat, thinner at the edges and slightly thicker in the centre - hence their name, which comes from “piccole lingue” (= small tongues). They make a winning combination with basil pesto, but they are also great with tomato sauces, fish and squid ink sauces. At the Fattoria the cooks often prepare them with “Pesto al Finocchietto”... absolutely delicious!
A cooking tip: stir the pasta delicately, and only towards the end of the cooking time, to avoid it breaking.
