Savour it spread on crackers, slices of toasted bread, “morsels” of cheese or raw vegetables. It can be used to dress pasta or rice – better still with the addition, for each jar, of 2 or 3 spoonfuls of olive oil and the water the pasta was cooked in, and some grated pecorino or Parmigiano – possibly adding other ingredients, such as sun-dried tomatoes, fresh cheese, tuna or anchovies.
It’s also delicious on meat carpaccio, roast beef, boiled meats.
