On toasted bread, segments of hard-boiled egg, small chunks of cheese or omelettes, with raw vegetables, combined with eggs (fried, poached). It’s a special sauce and also excellent for dressing rice and pasta. To enhance the flavour in a dish of pasta, add grated Parmigiano and/or pecorino cheese, 1 or 2 spoonfuls of extra virgin olive oil and a little of the water the pasta was cooked in.
Ingredients: Asparagus, Extra virgin olive oil, Pine nuts, Grape must, Salt of Trapani I.G.P., Wine vinegar, Lemon.
