The 2023 harvest in Puglia
The season’s weather conditions weren’t unusual for the big olive trees in Puglia, accustomed as they are to hot, dry summers. The irrigation systems, in action from the first few days of June, made it possible to overcome the long and very hot summer without too much stress, until the first rain arrived in mid-September. Abundant flowering and optimal fruit set ensured an excellent crop of fruit that didn’t encounter any particular problems other than the exceptionally hot temperatures, which in any case help the trees ward off all kinds of parasites and accentuate their defensive “attributes” (polyphenols and other plant metabolism compounds, rich in healthy physical, chemical and biological properties). The olives reached ripeness healthy and full of oil. The harvest and the first milling in Puglia began on October 20th.
The extra virgin olive oil La Malva comes from perfectly healthy Ogliarola Garganica and Coratina olives, which are taken to the mill and crushed within 12 hours of picking. These efforts, once again this year, have ensured an extraordinary end result from an organoleptic point of view...
Tasting: this oil is bright green in colour with brilliant highlights, it emanates strong, intense aromas grass and freshly crushed olives; it has a mellow taste and leaves a pleasant, slightly bitter and spicy aftertaste due to the high polyphenol content. These are the qualities that the majestic olive trees in Puglia gave us in the 2023 harvest.
Food Pairing: La Malva is a mellow oil that can be used raw on delicate dishes such as tuna tartare, orange and fennel salad, creamy squash soup or a julienne of zucchini with a “splash” of lemon juice and a “pinch” of garlic. However it is also suitable – and this goes for all the Fattoria’s oils – to be heated for cooking things in a frying pan or in the oven, for sauces, pulses, potatoes and other vegetables.
