This tasting pack contains a selection of 6 types of olive oil and vinegar from Fattoria La Vialla:
- 1 btl. Extra Virgin Olive Oil La Vialla from Tuscany (unfiltered, 750 ml)
- 1 btl. Extra Virgin Olive Oil La Malva from Puglia (unfiltered, 750 ml)
- 1 btl. Balsamic Vinegar of Modena I.G.P. (unfiltered, 250 ml)
- 1 btl. Balsamico Bianco (unfiltered, 250 ml)
- 1 btl. Extra Virgin Olive Oil with Rosemary (unfiltered, 200 ml)
- 1 btl. Extra Virgin Olive Oil with Basil (unfiltered, 200 ml)
Olive oil is one of the “cornerstones” of Tuscan cuisine. La Vialla’s is obtained by mechanically cold pressing of the olives, within 24-48 of harvesting, without any additives and without filtering.
The Tuscan olive oil from La Vialla stands out for its intensity, strong character, aromas of grass and artichoke, harmonious flavour and high polyphenol content, which makes it slightly bitter and spicy, especially in the first six months after production. The La Malva olive oil – which comes from Puglia – is delicate, it has aromas of dried fruit and olive paste, and is velvety on the palate with a slightly pungent and spicy aftertaste. In the Fattoria’s own olive mill, which is certified carbon-neutral, extra virgin olive oils with basil and rosemary are also produced. For these oils the olives are stone-ground together with 15% of herbs – a perfect combination both for cooking and to used raw as a dressing.
Since La Vialla started producing wine (so practically since forever), it has also been producing vinegar! The grape must for the Fattoria’s “balsamics”, which comes from organic Trebbiano grapes, is partly turned into vinegar and partly concentrated, to achieve the characteristic thickness and sweetness of these dressings. The Balsamic Vinegar of Modena is also aged in wooden barrels.
