Lots of specialities (one more than last year) with a flavour of Tuscany: chunks of Pecorino Gran Riserva cheese, Spicy Salami and Fennel Sausages, Spicy Chopped Olives with herbs – maybe spread on the crunchy, rustic Quadrelli – and mixed vegetable Giardiniera, all washed down with the exuberant bubbles of the Mussantino Selvatico Rosé, made with Pinot Nero grapes. To accompany the very Tuscan Pappardelle with Wild Boar Sauce and Spaghetti with Sugo Bombolino, we uncork an important red, Chianti Riserva 2020. The – most typical – finishing touch is given by a drizzle of Extra Virgin Olive Oil, which is on the table alongside the Balsamic Vinegar of Modena. And to conclude, there are rustic Viallini biscuits and Chocolate Truffles.
