To get off to a flavoursome start, ready to tempt us are the Small Seasoned Artichokes; tender, picked when in season, cut into quarters and skilfully dressed with extra virgin olive oil, wine vinegar, salt, pepper and bay leaves. After such an appetiser comes an exquisite and audacious dish of pasta, Fusilli, with their tightly wound spirals that envelop and enclose the hot Sugo all’arrabbiata, one of Italy’s most delicious and famous pasta sauces; at the Fattoria it’s prepared in the sauce kitchen’s “pentoloni” (= big pans), which work at a low temperature and in a vacuum, to preserve the organoleptic and nutritional properties of the ingredients. It’s a “hot” sauce – as it’s meant to be – but the spiciness is balanced by the creamy consistency and by some Viallino “additions” such as bell peppers and onions. On top of the pasta goes a nice “drizzle” of Extra Virgin Olive Oil, always on the table, ready to add its unmistakable touch of flavour.
