Fattoria La Vialla was one of the ten pilot companies in Italy that participated in research, promoted by the European Commission, with the aim of establishing a common regulation for the states involved. The project had a duration of 38 months (the time of three harvests) and aimed to establish the requirements necessary for a wine to be organic. The first objective was the progressive reduction, in cultivation and in vinification, of the use of sulphur dioxide, already used in very small percentages compared to its use in conventional agriculture. In Italy, scientific research, coordinated by professor Roberto Zironi from the University of Udine, then used the results obtained from the ten pilot companies according to the various protocols adopted....
