Fresh and fruity, versatile, never banal, Torbolino has charmed everyone with its 100% Viallino “recipe”. The precious characteristics of the “ingredients”, the three grape varieties, are perfectly balanced in the wine. This year we had to divide the harvest in two phases, due to the weather. The Sauvignon and Viognier were picked after a long period of torrid heat, their grapes were small, concentrated and very sweet; the Chardonnay, which was picked in September, had turgid, plump grapes with marked acidity due to the abundant rainfall. Fermentation was regular, also because the sugar content wasn’t too high, with the noble lees kept in suspension in the wine thanks to frequent bâtonnage.
Tasting – Colour: straw yellow with golden highlights and slight green nuances. The nose: a variety of fruity aromas, from yellow-fleshed fruits to tropical nuances, with distinct notes of boxwood and sage typical of Sauvignon. In the mouth: pleasant and fresh with a round, vivacious taste.
Wine and Food Pairing – It makes a perfect match with nibbles and appetizers, in summer it can accompany crunchy Panzanella, in winter an orange and fennel salad. It’s excellent company for linguine with basil pesto, green beans and potatoes (as per the traditional recipe), for oven-baked rigatoni, liver pâté, smoked fish or a seafood platter.
